Skinny Bruschetta

Have you ever been to an italian restaurant and drooled over the bruschetta, but were too calorie conscious to consume? I LOVE bruschetta and have a hard time passing it up personally. This is a quick and easy snack and it's under 200 calories easy!

Ingredients
1 large beefsteak tomato
5 Basil leaves
1 Tbsp olive oil
1/2 wheat english muffin
Sea salt to taste
Fresh Ground Pepper to taste

Preparation
Dice the tomato and sprinkle with sea salt on the cutting board.
Slice the basil leaves in thin vertical strips.
Place the tomatoes and basil to a bowl and add the olive oil, stirring to coat.
Add the cracked pepper and salt if needed.
Broil the muffin until slightly brown.
Top the muffin with the mixture and the juices and allow to sit for a minute.
Enjoy!

This serves one. If you are looking for some variation, you can add some fresh mozzarella balls to the tomato mixture or brush some olive oil on the muffin with a little garlic salt before broiling.
